Taltarni

Established in 1969, Taltarni is one of the founding wineries of Victoria’s Pyrenees wine region. Owner John Goelet, a direct descendant of the Guestier wine merchant family of Bordeaux, discovered and purchased Taltarni Vineyard in 1972 after conducting a worldwide search for a site comparable to the great vineyards of Bordeaux.

Clover Hill is one of Australia’s principal chardonnay, pinot noir and pinot meunier cuvées. In 1986, on the site of an old dairy farm in north-east Tasmania, the magnificent Clover Hill Vineyard was established by the Goelet family. Their aim was, and still is, to produce superb sparkling wine using traditional French methodology. Since its debut vintage in 1991, Clover Hill has gained a reputation for its uncompromising quality, its elegance and finesse, and its distinguished Tasmanian style.

Ben Milbourne ~ Master Chef & TV Host

Ben Milbourne appeared on MasterChef 2012, the series which his best mate Andy Allen went on to win. In the years since the TV juggernaut, Milbourne has produced two cookbooks – last year’s Mexican Craving and Tasmanian Trail – and travelled the country and the world. Ben now has his own TV show on Channel 10, ‘Ben’s Menu’, which has just been nominated for a Logie! This exciting new foodie series is filmed at Ben’s picturesque farmhouse in northwest Tasmania. Ben attributes his love of food to his grandmother, she used to bake for the 40 plus tradesmen employed by the family business each morning. He remembers making scones with her after school and her cookie jar full of ANZAC biscuits. Cooking wasn't where Ben headed initially went with his career; as teaching beckoned. Masterchef Season 4 was a turning point for Ben and his passion for food. Since the show, opportunities to continue working with food has been widespread with Ben appearing on national morning breakfast shows, guest appearances on 'Ready, Steady, Cook' and 'Everyday Gourmet'.

Ben's first cookbook, Mexican Craving, was launched in November 2013. His second book, based on Tasmanian producers, was released in September, 2014. He currently has an ongoing column in his local newspaper and a 'Talking Food' segment on his local radio station. Ben's TV show, Ben's Menu, began airing weekdays on channel 10 in September, 2014.

Ben's personality and down to Earth approach has made him popular with people of all ages. His philosophy is unassuming; "My food style is simple; take ingredients and recipes that will bring people together, combine them in a way that is interesting but achievable. Above all cook it because you love it. You have to fall in love with the process. The process of discovering the ingredients, developing the idea, creating the dish, sharing the flavour and discussing the outcome; this is what food is all about".

Carly and Tresne

After appearing on the highest rating TV show in Australia in 2014, the bubbly and positive couple won the nations hearts with their positivity and love for everyone around them and each other. The endearing duo have been winning the hearts of viewers with their positive attitude since entering as gatecrashers in the third instant restaurant round. Carly, with her lucky charms and magical affirmations, has been affectionately dubbed ‘Kooky Carly’. They have even been known to assist rival teams in a sudden death showdown – “a competition first”, as Pete called it. After coming out publicly during the airing of the show they unknowingly created a media frenzy with story inspiring many others all around the globe.

They both now share a positive outlook on life and want to share their secrets to happiness where ever they go! Keep an eye out for tips from Carly and Tresne on creating a wealth of happiness using positive thinking and the law of attraction.

With just $500 in her pocket, at age 18, Jessie Spiby packed her bags and headed for the UK. Looking back now she wonders how she did it, but she took the challenge in her stride, living and working in London for 18 months and in Edinburgh for six months. While based in Europe, Jessie visited Italy, Turkey, Poland, Croatia and the Czech Republic (she had visited France and Spain as a child). More recently she has been to Asia, with Vietnam a firm favourite and a major influence on her cooking. Growing up in Adelaide, Jessie learnt to cook from her mum and grandma. She further developed her skills while travelling. As well as Vietnamese food, Jessie loves fresh vibrant flavours like Thai and Spanish.
After studying interior architecture for four years, Jessie switched to graphic design and worked for a number of magazines before putting her career on hold to pursue a future in food. Her partner of five-and-a-half years, Matt, an electrician, is 100 per cent behind Jessie and is her biggest supporter, alongside her mum and step-dad, her dad, sister, step-brother and two step-sisters.Jessie already has a clear vision of her dream venue. It will be a warehouse space, serving Asian street food featuring native Australian ingredients. The vibe would be completed by street art and installations. With food heroes such as Luke Nguyen, Matthew Evans, Yotam Ottolenghi, Maggie Beer and Simon Bryant, Jessie says her ambition is to make food her life. “I had such an amazing experience in Vietnam and just fell in love with the culture and the lifestyle. It made me want to be my own boss and move to my own beat. I love cooking and I love feeding people. I just love seeing people enjoy food, my food or any food.”

Nikhil, Executive Chef of the National Convention Centre has spent the last 8 years in Canberra having previously worked in the UK and India. He’s passionate about local produce and supporting the local growers wherever possible. Given Canberra’s lush surroundings, it’s a great place to be a Chef! His interest in food developed through a school career workshop, where he completed a behind-the-scenes tour of a hotel, witnessing chefs working as a team in a highly organised environment, to create beautiful dishes. The way they worked together, through eye contact and not much talking, awakened his interest in the hotel industry which has provided him with an opportunity to travel the world and experience different cuisines. More than 19 years later and he still has the same passion for food and team work.

Prasantha Giragama Prasantha Giragama was born in Sri Lanka and started his culinary journey affair since 1995. With a background in French cuisine, Prasantha’s knowledge and expertise in Asian and European cuisine sees a unique blend of flavours in his culinary creations. Prasantha is focused and determined to bring fine dining experience at its best to guests at Crowne Plaza Canberra. His seasonal menu supports the concept of Paddock to Plate that stems from fresh and good quality local produce. Prasantha supports the Truffle Festival in celebrating this season’s very best – our much loved local truffle produce.
